New (Hibiscus) Tonic!

Housemade tonic has been a part of Subject’s beverage program since our humble start sixteen months ago. Though perhaps not as popular as our Subject Rum & Root Beer (Denizen, Smith & Cross, Housemade Root Beer, Cinnamon-Burdock Tincture, Lime) or Whiskey & Cola (Whipper Snapper, Housemade Cola, Lime), our twist on the G&T enjoys a cult following.

If you’ve never enjoyed our tonic or other all-natural brands, chances are you’ll be surprised when you see the color. Since we use cinchona bark instead of quinine extract, our tonic syrup takes on a pinkish hue. Regardless of how you pronounce it, cinchona, the natural source of quinine, is the main ingredient in tonic, and is the only ingredient besides sugar and water necessary to make tonic syrup.

After boiling cinchona bark we add citric acid and sugar and flavor with lime, lemon and orange. To the latest batch we’ve also added hibiscus, creating a deep red color and a gentle floral flavor. Recently we’ve been pouring our tonic with Damrak’s crisp, citrusy Amsterdam gin in the Subject Gin & Tonic. Come try one and let us know what you think :-)
